Old town Oleshki is surrounded by the southern prairies and washed by the beautiful river Dnipro. It remembers the first Skythians and brave Oleshki’s kossaks. At all times this land was occupied by a kind and sincere people with a good taste in food. Here today you can find an outstanding restaurant of Ukrainian cuisine «Pan Ataman», which combines old Ukrainian traditions, tastes and colours of the southern region.
South Ukrainian cuisine is not only a great variety of tastes but also great entertainment. Restaurant «Pan Ataman» has an outstanding menu where every dish has its own history and is cooked to perfection with individual care. We’ve brought to life the gastronomic culture of the Southern region!
At the restaurant we use only natural and ecological products from the local region: farm meat, fresh vegetables and ripe fruits – everything is grown in the local area. Therefore, all our dishes have a beautiful taste.

Our region is very rich in vegetables, fruits and farms. Therefore, we introduced our own production from local products. We invest not only the knowledge that has been transmitted to us from generation to generation, but also the soul and heart. Made with love for you!
Varenyky (Ukrainian dumplings) from Pan – created from local products of our land in the best Ukrainian traditions that are passed down from generation to generation. The restaurant offers various types of dumplings: boiled, fried and baked. The raisins of our menu are multi-colored dumplings that are tinted with natural juices from carrots, spinach and beets.
Cheese HAND MADE from Chef – cheese of our own production, which is prepared by the Chef of our restaurant for a traditional recipe from cow’s milk.
Juices – made from fruits and vegetables of the Kherson region, using a special manual press for juice. Our juices do not contain preservatives and without added sugar. Try mineral-rich juices from Pan – stay healthy and strong!
Cocktails from Pan – a collection of cocktails from Pan created for real Atamans. Tinctures have incorporated the tastes of our native land. Baked ham, smoked and pickled lard.
Homemade sausages for grandmother’s recipe. Honey from fragrant Kherson flowers, linden, acacia and herbs. Pickled meat and a variety of goodies for a picnic.

Restaurant Pan Ataman revived the unique tastes of the past!
The chef of our restaurant, Ivan Tsurikov, gave a new life to the dish “Carp in wine sauce with mashed parsnip”. This dish has become one of the most popular dishes in our restaurant.
«Kherson. Vintage cooking» is a project whose idea is the revival of historical authentic cuisine of the south of Ukraine. Search and restoration of recipes of the XVIII century. in a modern interpretation based on local products and modern equipment. Project founder Marina Tarasova, project brand-chef Shostak Alexander. Each dish has its own history, or is dedicated to a person whose name is included in the history of our region. Dish “Carp in wine sauce with mashed parsnip” dedicated to American Admiral John Paul Jones and his famous victory in the Battle of Liman. Admiral John Paul Jones commanded the Black Sea Cossack army during the Russian-Turkish war.
We invite everyone to immerse themselves in the gastronomic euphoria of the past with the Pan Ataman restaurant!

Ivan Tsurikov is a real innovator among chefs of the southern region! He is not afraid to combine modern technologies in classic recipes of favorite dishes. The chef himself selects vegetables, fruits and meat for cooking in the restaurant. He takes care of every guest in the restaurant Ivan Tsurikov is distinguished by his diligence and sincere love for real traditional Ukrainian kitchen. The chef revived the old recipe “Carp in wine sauce with mashed parsnip”, which became a real business card not only of our restaurant, but also of the tourist Kherson region. In the hunting seasons, Ivan Tsurikov often independently takes care of providing game and fresh fish to the restaurant tables, going hunting and fishing.
Chef “Pan Ataman” is not only a culinary virtuoso, but also a talented manager who also multiplies his professional successes: he is a member of the Chefs Association of Southern Ukraine, a participant of the International Chefs Congress and a participant of the project: “Kherson. Vintage Kitchen.
